I look at all vegetables as what to compliment a regular meal. Several vegetables in combination can be a nice light meal. My favorite combo is tomatoes, peppers, cucumbers and zucchini all chunked up with nothing but salt and sometimes black pepper.

Even though I am not a vegetarian, there are so many vegetables I like fixed so many ways, I can't pick!!

Green beans cooked to still 'with a bite' to them, mixed with cubed fried potatoes and some sautéd onions... Mom used to like them that way too but also with some tomato added...

If the question was to use only one kind of vegetable in your meal:
1. Potatoes 2. Green beans 3. Broccoli
Any one, of the three above in sufficient quantity, with just salt, pepper, and butter in a giant bowl can make a meal for me.

I also couldn't pick a favorite, given all of the choices. However, at this time of year I used to make something every year, when Mom and some others could still get in here: a roast pumpkin soup. This is made with a 5 lb, or slightly larger pumpkin, with a flat bottom. The top is cut, so it can be replaced while roasting, and the seeds are scraped out of the pumpkin. Then, layers of toasted 1/2" slices of homemade french bread are layered in the pumpkin, then sprinkled with shredded gruyére cheese and some fresh thyme leaves, and a 2:1 mix of chicken stock and heavy cream poured in to cover. This is repeated, until 3/4 full. Then the top is replaced, it is put in a shallow baking pan on a sheet of foil, then baked for 1 hour in a preheated 350° oven. Then it is served, with more of the French bread, scooping out some of the cooked pumpkin with each serving.
The leftovers, when only a couple are eating, make a great gratin, with even more cheese on the top!

Even though I am not a vegetarian, there are so many vegetables I like fixed so many ways, I can't pick!! Same here. I have a different favorite during each harvest time starting with asparagus in the Spring. Now in the Fall it's winter squash. I am making a new recipe with acorn squash tonight.

Is cow a vegetable? Probably not.
I'll pick lettuce - and all the things I can pile on top of it for flavor and texture.
My current favorite salad is a large bed of knife-cut shredded Romaine, crumbled bacon, blue cheese, avocado, sometimes mashed egg and/or leftover meat shreds, seasonings including 'hot', olive oil and vinegar. I have this several times per week.

I can make a meal with most vegetables. Potatoes and Butternut squash can become gnocchi; eggplant is turned into Parmesan, tomatoes into sauces and soups, etc. But I think that the question is if the same veggie can be served in many different ways during the course of a meal. My answer would be yes, but who wants it?
