Do you mind tomato peels in a dish? If so, when and how do you peel them?
This is a follow-up to Brownrexx's question yesterday about freezing tomatoes.

I don't like tomato peels in my sauces so I core and dip the tomatoes into boiling water and then ice water to peel them before using in sauces or chopping up for the freezer.
I think that the peels seem tough and I don't like the texture. I don't strain the seeds though, I don't mind them.

Generally I am fine with tomato peel in raw uses, but finding a sheet of tomato peel in most cooked dishes is annoying. The peel usually separates from the flesh during cooking, so you get chunks of peel all by itself in a cooked dish. Also, there is a big texture contrast since the peel stays tough even after the flesh has gotten really soft or even fallen apart. That makes the peel much more noticeable in a cooked dish.
For dishes where the tomatoes are cooked all the way down, such as tomato sauce, I use a tomato mill to separate the seeds and skin from the flesh and juice before cooking.
For dishes with chunks of tomato in the finished dish, I use the boiling water-ice water method to peel before cooking. Unless the dish only calls for a tomato or two, in which case it's faster (and dirties a lot fewer dishes) to peel with a knife.
One thing I have thought of (but haven't tried) is using my immersion blender to pulverize the seeds and peel in a tomato sauce after the sauce has cooked for a while. I think it would be impractical for a large batch of sauce, though.

Tomato peels can not be digested. They are the equivalent to natural plastic. They are also not allowed in commercial products. On a crime TV show, Italian Mafia thought about smuggling heroin into the US in canned tomatoes. They grew their own tomatoes and set up their own canning company. Trial shipment got through Customs OK but rejected by FDA. Mafia forgot to peel the tomatoes!
