It's the new weed, apparently. Found out I could have been popping it into the blender for smoothies all this time! Very mild tasting. Could have a number of uses in the kitchen, as a spinach sub. Not trying it in salads as "prickly" but I bet the smooth version would work. Will be looking for it to pop up next year the vitamix will be waiting.

Isn't that something related to dandelions? I occasionally see them, but fortunately, it hasn't become invasive, as in some areas.
I used to get my epazote as a weed, as it would come back somewhere every season! That's the only wild weed I have harvested. The better red epazote I found must not be cold resistant, as it never re-seeds itself, like the green. I still see the green coming up in sidewalk and street cracks in many places!
This reminds me - soon I need a cutting to root, for the off season hydroponics.

I like to eat chickweed, dock, mullein and henbit and some others I haven't identified yet. Always looking for something new.
