St. Patrick's Day is coming soon. Do you make a corned beef dinner?
I am not Irish but I like traditions so yes, I will cook corned beef on the 17th.
I love corned beef but lately I have discovered that most of my friends do not like it. Do you?
I just picked up a Corned Beef at Giant today for $2.47 / lb and will cook it in the crock pot.
I do not like to cook potatoes, carrots and cabbage in the same pot as the corned beef so I will make little round potatoes with butter and chives as well as sautéed cabbage.
I will make Rueben sandwiches with the left overs. Actually I don't like sauerkraut so I substitute coleslaw on mine which makes it a Rachael. We only eat these once a year and really like them.

I like corned beef, but it's never on sale, except now! But then, I have also made my own, with cheap top round.
I did see some deals for next week - haven't figured out if I will get extra to freeze.

Was digging around in one freezer yesterday and found one that I picked up on closeout at WalMart last year. Grocery shopping this morning, wife added a head of cabbage to my cart. Already have carrots and potatoes on hand. 'Nuff said!

I really like corned beef, prefer the cheaper point cut mostly. Haven't made it in a long time, except for canning some up. Used to sort steam it with the carrots, potatoes, onions, big thick wedges of cabbage and celery in a pot, all perched up on a weird sort of trivet thing that was about 3 or 4 inches tall. Always soaked the corned beef in a couple changes of water for about 12 hours before cooking it that way so as not to be too salty. Love corned beef hot or cold. Bubble and Squeak the next day, also yummy with some of the CB shredded into it.
I also used to take the CB stock water and thicken it up some, and use it like an au jus for dipping CB sandwiches in after the "proper" dinner.

I like it in Reuben sandwiches when eating out, have never tried to make it at home. I'm pretty sure a big hunk would be would be too salty for me to eat much of. I don't use a lot of salt in meat, just heavy on the garlic and pepper.

I'm pretty sure a big hunk would be would be too salty for me to eat much of. I don't use a lot of salt in meat, just heavy on the garlic and pepper. Strangely I do not use much salt either and really do not like it but I don't remember thinking that corned beef was salty. It is more fatty than what I usually eat though but I still love it. Guilty pleasure? Maybe cooking it in water all day in the crock pot removes a lot of the salt. I also rinse off the liquid that it is packaged in before cooking.

except for canning some up Canned with potatoes makes the best hash ever!! My favorite way to can it anyway.

If you dice up some onions and carrots, it makes not only a quick "boiled" dinner, but great hash, too. I like to use chicken broth to add another layer of flavor to it in canning the corned beef. And beef broth with whole small button mushrooms is good canned up. Even a tough brisket of CB gets so tender when canned.

I love corned beef, DH tolerates it, but the kids hate it. Oh, I take that back - one of my kids has developed an appreciation for corned beef hash in the past year. I make corned beef once a year for St. Patty's day (like brownrexx, I'm not Irish, but I enjoy traditions). Sandwiches and hash from the leftovers are yummy, too. Using a slow cooker makes it easy to ensure that the meat is tender, and cooking the veggies on the side makes it easier to use the leftovers for sandwiches and hash. Oh, and I have a little cabbage from my garden to use. But unlike brownrexx, I love Reubens. Heck, am fine with eating all of the yummy sandwich insides without the bread! So I need to remember to pick up a small container of sauerkraut.

Something I noticed early on, when making corned beef myself, was that it was less salty. I guess commercial CB is overdosed with salt, to help with storage.
Has anyone else out there made corned pork? While it wasn't called that, I have made something that I got from a Chinese cookbook, that heavily salted the pork, refrigerated several days, then rinsed it, and steamed it. My first thought was how similar the flavor was to corned beef! Something similar could be done in a brine, as with corned beef - maybe with a boneless loin, with all that fat removed, and trimmed to an even thickness (and all saved for sausage, of course).

My memory tells me there is too much garlic in corned beef. Haven't had it for many years even though it was a St. Patrick's staple growing up.

Tonight is a home made chicken soup night. Chicken thighs, those small little bite size potatoes, carrots, onion, garlic,celery, baby spinach and some baby kale and chard mix, some medallions of summer squash and snap peas. I just have a hard time making a small pot of soup, so will be sharing it with a neighbor or three, LOL!!
I will still be eating it for a few says, but as long as I watch to not have too many of the potatoes, it is all okay on the diet.

Aldi's has corned beef on sale about now. I put three in the freezer last week, will put in more if they are on sale.
Until St. Pat's day the stores will carry them.

My corned beef is in the crock pot this morning. I will be cooking potatoes, carrots and cabbage separately since I do not really like vegetables cooked with the meat. It is a very salty meat for one thing and I do not want all of that salt in my vegetables.
It was on sale at Giant for $2.47/lb. so this roast will make tonight's dinner, tomorrow's Reuben sandwich dinner and a couple of cold corned beef lunch sandwiches. Not bad for a cost of less than $6.
I bought an additional one yesterday and put it in the freezer. We will not eat it for a few months. I really like corned beef.

I am doing the chicken soup thing, but haven't bought any corned beef as yet. I do have some canned up, some with potatoes with the CB. I'll be looking for the sales after today. I do like corned beef, CB hash with a nice egg and sandwiches.

Corned beef in oven right now. Vegetables with it are cabbage, carrots, onions, parsnips, and potatoes. Smells great already and still 2 hours away from enjoying it.

I'm drooling just thinking of those packages of corned beef in the freezer. Corned beef with cabbage and carrots, then reubens on pumpernickel I love the stuff. I also like the packer cut brisket for BBQ. The whole thing, fat and all, cooked slow all day on the grill. Enough to serve the whole family of kids and grands.
