Have a question about canning golden beets. Have always canned red beets, am wondering if anyone has canned the golden ones? From what I have read they might be a little sweeter and most of all they don’t stain everything like the reds do.

Yes I can them same as the red ones. Sometimes I use chicken stock or a beef stock with the red ones to make a start on borscht. I also like to dill garlic pickle the gold ones.

I don't do canning anymore but I know that beets are a low acid food and need to be pickled for canning or you will need to use a pressure canner.
I grew yellow beets one year and we ate them fresh but they were pretty.

Everything that applies to red beets applies to yellow as far as canning. However, they turn out brown. This reminds me that I still have a couple pints of them pickled from years ago.
