We were shopping yesterday and saw this stuff and just couldn't buy it as we just don't know what it taste like or even how to cook/prepare it!

I don't buy it but I don't mind eating it. It seems to me to be a sponge, soaking up flavors.

I don't know! I have bought a brick a couple of times to experiment with, but then it got lost in the back of the fridge and was months out of date when found. So don't think I have ever tasted any.

I used to use it more, when I had a vegetarian friend, and I would make things for her with it, and actually made it myself...but only once! Easy to get cheap in Asian markets around here. I learned somewhere that if you freeze it, then thaw it, it gets spongy, but it doesn't break up, like it has a tendency to do.

Firm or extra-firm tofu can be pretty good if prepared properly. As others have said, it soaks up other flavors, so if it's prepared in a way that allows it to soak up lots of flavor, it can be yummy. But if prepared wrong, the texture and taste make it like trying to eat a rubbery sponge. Yuck! I haven't made tofu at home for years (the kids all turned up their noses at it), but occasionally when out I will get something like a combination Pad Thai or stir-fry that includes some tofu, and I usually enjoy the tofu in those. Though occasionally even the Chinese or Thai places mess up the tofu and I find myself picking bits of rubbery sponge off my plate.
