What I think is a spaghetti squash vine and some type of pepper plant have shown up in my garden. How do I know when they’re ripe?

Peppers can be eaten in the unripe green stage, but you can also watch it to see if it turns yellow, orange or red. Spaghettie squash is a winter squash, so let it get a hard skin, almost too hard to be able to push your thumbnail into it. Then cure it off the vine and out of the sun for at least a few days, bring it in and store it.

bestofour, They look good. You can eat the pepper now or wait for it to change color. Either way. Spaghetti Squash I have no idea as I’ve not grown them. I generally only grow summer squash and pick young and often. I’d go with what @imp suggested.

Most I have seen change to a buff, yellow or orangish color when mature, but check it to make sure the skin is hardened before harvesting it.

will the spaghetti squash change colors? Mine always turn a pale yellow color and as @imp said the skin gets very hard.
