Went out into the cold and frozen garage a bit ago to rummage around for something and found these leftovers from a warmer time. They must have been greenies forgotten about but ripened during the past couple of months. Frozen solid but still pretty. Nice for Nebraska in December.

I always freeze some whole, unpeeled tomatoes in Ziploc bags in my actual freezer. They are only good for cooking but taste so much better than those canned ones or the cardboard fresh ones in the supermarket.

I tried the big orange one in a burrito yesterday. It was sort of leathery and very tasteless. We freeze tomatoes to use in soups, sauces etc., but that one was not much for anything except it was pretty to look at.

I use those frozen tomatoes for some things that call for fresh tomatoes, such as guacamole. I chop them up, semi-thawed - a little more loose, but better than 99% of those storebought tomatoes. Also makes gazpacho basically the same as fresh, but not the type of soup I usually make in the winter, even though I love it in the summertime.
