pepperhead212, Yes, I like stuff like this, but so much of the time, especially here in the south, they want to dump a cup of mayonnaise in it. It takes away from the fresh tomato taste and gives it a totally different taste. Or at least it does for me.

OMG, hairymooseknuckles, that turns my stomach just to think about it! But then, I hate mayo in general, unless I make it! lol The oil I put in this is some good olive oil - the organic olive oil they sell at Aldi has a really good flavor, and I use that in my salads, and other raw foods. In this, I use a small amount of a good red wine vinegar, too, but not a lot.

I must be weird, okay we all KNOW I am LOL, but I like mayonnaise, especially Duke's. I don't want my pasta or potato salads swimming in it, but a tart mayo can be good. Or on home grown tomato slices with a shake of salt.
Ate the contents of the tongue tacos, but not the tortillas for supper. The meat was tender and seasoned well. Thinking of making some coffee...

I still have two of those Thai grilled chicken thighs, but I'm going to have to wait until later to eat one of those. Besides the usual tomatoes and pickled cucumbers I was snacking on, I made some bean salad, using all of the green beans I've harvested, plus a can each of white and dark red kidney beans, and 3/4 cup of whole oat groats, cooked in the IP. I also stirred in some chives, feta cubes, a minced Paper Lantern pepper, some minced Syrian oregano (like adding thyme), a bunch of halved cherry tomatoes, and my favorite vinaigrette. I probably ate a half bowl while mixing it, before eating the full bowl - the reason I am really not hungry yet for the chicken! Becca made home made menudo and brought me a large bowl of it tonight ! She did an excellent job with it and I ate a bit to much, but it was sooo good. Lucky me !!
She told me she made a big pot, so there can be more tomorrow, yes !

@imp, Yes, it’s just too hot to worry with cooking. Usually between 8 and 10 pm, me and my three pups share an apple. If I run out of apples before I can get to store, I have to find something else. Tonight I have them a graham cracker. My wife says they are spoiled rotten. You should hear the ruckus when it gets close to snack time. Hahahaaa!
I say pups. They are not actually puppies. One is 10, one is 9 and the youngest will be 3 this Christmas. They love going to get frozen yogurt. They all ride well and love to go. We don’t take them with us in the heat of day because you never know. I’m always afraid of having car trouble and them getting overheated, so we wait till sundown to go for rides. That is unless it’s for grooming or vet visits.

Today I made a sambar, with 2 kinds of dal, and a bunch of okra, to use up all I had in a ziploc bag. I also used 2 small eggplants I just harvested. I also used up some tomatoes - ones I had to cut bad spots out of. I didn't eat much of it - I'm sharing it with some friends tomorrow. I also made a cucumber onion pachadi - something sort of like a raita, but more added to it, which I've made other versions of before. I have a bunch of cukes to use up, so I tried it, and it was really good. I ate all of that, I liked it so much, so I'll make a bunch more, for them. Cutting the items up took longer than it took to cook it. Jim had to drive down to a family funeral, so I was alone and finally able to cook up my zucchini which he does not care for. Tomato, zucchini, garlic and onion stir fry. Italian seasonings, topped with shredded Parmesan cheese, pot liquor sopped up with a piece of bread and butter.

I must be weird, LOL, I like zucchini in many ways. I try for the littler ones, I think they are the best, but even the bigger ones are good stuffed.

You're not weird, @imp - I always wonder why people don't like zucchini, and similar squash, as they taste however you want them to! Not something like a brassica veggy. I really wish I could grow them! lol
I had some more of my gazpacho for a late breakfast/early lunch today. I had some ripening tomatoes that developed bad spots, and this is something I frequently do with those - clean them up, and throw them in the VM with the oldest cukes (and all the other ingredients, of course).

We like both summer and winter squash here. Tonight's dinner was burgers on the grill on bakery made Kaiser rolls. The tomato slices were from my first ripe Cherokee Purple. On the side we had cole slaw and grilled squash and eggplant. I just brush the slices with olive oil and grill the veggies. I sautéed patty pan cubes, onions, garlic, fresh mushrooms, chopped red pepper and added some fresh tomatoes. Last night we had chicken and shrimp fajitas, with homemade salsa. Very yummy. Tonight my in-laws are taking us to a hibachi place for our anniversary. Though it's possible our anniversary is just an excuse to go to the hibachi place, since my FIL really likes going there. But a free dinner out is nothing to sneeze at regardless of the reason, right?

Simple tacos without the usual ten or so ingredients. Ground venison, shredded cheddar, lettuce, and tomatoes. Good enough!

Had my visitors for supper, so had to make a big meal of fried sunfish fillets, rice dish, sweet corn and tossed salad. Ice cream for dessert. I was going to make biscuits from the store tubes, but the use by date was back in June (stuck in the back of the fridge) so I skipped them and we had more than we could eat as it was.

Tonight I made that patty pan squash sauté again but this time I added some chicken that I cooked in my stove top grill pan to turn it into a full meal. We also had our first ears of home grown Incredible corn and it was delicious! More tomorrow. Cobs went to the chickens and they enjoyed them too. A nice summer meal tonight. I was in the mood for some rice so I made Chicken, Rice and Peas in the Instant Pot tonight. Prep time was minimal, cook time was 5 minutes and pressure release time was 10 minutes. Tasty, quick, easy and did not heat up the kitchen. Homemade pork Bolognese over chicken potstickers. I had a bag of potstickers in the freezer and decided to dump the pork over and it is outstanding.
We had chicken sausages on homemade bread this afternoon for lunch. I picked a ton of greens, have tomatoes all over the house and various states of ripening, just enough zucchini as we eat tons of it. And many types of greens. We love sautéed greens with bacon bits. We could eat them every day (except for the oxalic acid content for me and the likelihood of creating kidney stones…)
